Legendary Hospitality, LLC is seeking a Chef de Cuisine / Executive Sous Chef for the Legacy Hotel in Green Bay, WI, set to open in September 2023. This role involves collaborating on the restaurant menu, hiring and training kitchen staff, and overseeing kitchen operations. Candidates should have a culinary degree and at least two years of experience. The position offers a competitive salary, uncapped incentives, and comprehensive health benefits. Property The Legacy Hotel, Green Bay, WI
Legendary Hospitality announces the development of the Legacy Hotel, a boutique all-suites luxury property, located one block from Lambeau Field in the Legends District. This distinctive hotel will be the most luxurious in the region and is scheduled to open in September 2023. Legendary Hospitality’s service culture is steeped in the traditions of the Midwest, combining authentic and attentive service, with the region’s finest amenities.
Objective of Role
The chef de cuisine will be responsible for collaborating with the Executive Chef on the signature restaurant menu, hiring and training kitchen staff, collaborating with restaurant management, optimizing staff productivity, and stepping in to help wherever needed. This role will also serve as Executive Sous Chef, with oversight of the overall kitchen operation.
Primary Duties and Responsibilities
• Ensuring that all food meets the highest quality standards and is served on time.
Planning the menu and designing the plating presentation for each dish.
Coordinating kitchen staff and assisting them as required.
Hiring and training staff to prepare and cook all the menu items.
Stocktaking ingredients and equipment and placing orders as needed.
Enforcing best practices for safety and sanitation in the kitchen.
Creating new recipes with Executive Chef to update the menu regularly.
Other duties as requested by the Executive Chef.
Experience and Educational Qualifications
• Degree in the Culinary Arts (preferred).
• At least 2 years experience in a similar role.
Other Characteristics Required
• Excellent knowledge of BOH systems, ordering, and inventory
• Excellent communication skills.
• Excellent leadership and interpersonal skills
• Excellent customer service skills
