Job Description
Frog Song Organics, LLC is seeking a Kitchen Manager in Hawthorne, FL, offering a salary of $40-$50k per year. Responsibilities include managing kitchen operations, producing meals for events, recipe development, and maintaining kitchen organization. Candidates should have culinary training, management experience, and a Serv-Safe Kitchen Manager Certificate. The role requires evening and weekend availability and involves working in a bilingual environment. Remote work is not an option.
Compensation: negotiable - budgeted $40-$50k per year for full time
Schedule: negotiable. Must include Tuesdays and be regularly available evenings and weekends for events

Requirements
• Formal training in culinary, event management, hospitality, food retail or similar industry.
• Serv-Safe Kitchen Manager Certificate
• Previous experience in management, developing recipes, creating and reporting on budgets / recipe costing, experience cooking for groups of 25-100 people at a time.
• Self-motivated, ability to work both with and without direct supervision
• Ability to communicate effectively and professionally with all staff and customers: in person, on the phone, and in writing
• Team player, can-do attitude, and able to handle changes and solve problems with grace
• Healthy lifestyle, no substance abuse, non-smoker (no tobacco use allowed on site)
• Ability to be present at work consistently, on time, to start each day.
• Exceptional attention to detail and follow-through
• Submit Time Card and Daily Log data each day before the end of work
• Work in a Bilingual English/Spanish environment and demonstrate respect for people of different cultures
• Motivated and able to consistently look for and implement ways to improve product quality, customer satisfaction, profitability and sustainability of the operation.
• Be able to lift up to 50lbs at a time safely to load/unload supplies
• Load vehicles with products as needed
• Maintain valid drivers license to be able to source products as needed and be able to be on farm insurance policy without added premium
• Maintain a positive attitude
• Communicate with professionalism and courtesy with coworkers and customers
• Perform repetitive tasks efficiently
• Bilingual in Spanish preferred, but not required
• Complete a background screening
Objectives:
• Produce family meals (Farm Lunch) for Tuesdays and possibly other days.
• Production of Value Added Goods, Recipe development
• Maintain cleanliness and organization of Kitchen
• Cost analysis and reporting, order packaging as needed, product development, plan next week’s production put in order in LFM and source ingredients
• Food Prep and Service for Seasonal Farm To Table / Agritourism Events
• Work with other staff on food vending during retail hours and events.
• Manage inventory of frozen meats, value-added products, and work with farm team for order fulfillment
• Additional opportunities to teach cooking classes and create other events and products.
Farm Lunch Cook (Family Meal)
We are looking for someone with proven experience cooking meals for 25 people at a time. Duties include:
• Communicate and coordinate with the production team to use leftover items and reduce waste, produce nutritious, economical and appealing meals.
• Plan and produce farm lunch for 25 people on Tuesdays
• Include vegan options and meet dietary restrictions of staff
• Purchase anything extra needed using one of our business cards, submit receipts and monthly reporting on meal costs per serving and total resources budgeted toward this employee benefit.
• Proven compliance with all applicable food safety protocols including ServSafe Kitchen Manager certification
Value Added Production
• Produce items such as elderberry syrup, strawberry jam, lard, dried fruits and teas, baked goods, fermented foods, bone broth, and other items for sale.
• Develop new products that take advantage of a waste stream or unused resource.
• Keep track of batch records and costs of production (using google sheets and forms)
Events & Retail Sales
• Participate in producing food and coordinating service for events (with assistance from serving staff and event coordinator)
• Produce and display products for sale for open hours for retail sales of farm products from kitchen building (may include some evenings and weekends). This may include staffing the open hours yourself or managing/training other staff for these hours.
• Learn and follow guidelines for SNAP benefits, Farmers Market Nutrition Program, Eldercare, and Fresh Access Bucks grant programs.
Job Duties
• Responsible for opening/closing of the on-site kitchen, responsible for regular cleaning and meeting health department and other regulatory requirements in coordination with owners and other staff as we bring on more help.
• Procure ingredients and packaging for existing and new products
• Maintain inventory to ensure appropriate packaging is on site at the commercial kitchen for production runs
• Track expenses and provide information needed to price products for sale
• Keep costs down and avoid unnecessary loss by processing the raw material efficiently, minimizing fuel expenses, creating an efficient work flow, and storing the materials (ingredients, work in progress, and finished products)
• Be present for on-farm events including tours, festivals, and during on site retail hours to vend and serve prepared foods, assist in planning and executing menus for these events.
• Look for ways to transform waste streams into valuable products.
• Be present for health inspections and make sure all of our products meet labeling and regulatory requirements
• Be able to effectively train and manage other staff in production and food safety protocols
• Coordinate and supervise rentals of the commercial kitchen space, working with events coordinator for private events
• Obtain permits and process authority control documents as needed
• Maintain and improve our handling, inventory, display and marketing of value added products and frozen meats.
• Work with Admin Manager / Online Store Manager / Production Manager to provide information and photos needed for online store and social media promotion of products
• Do hand labor and prep work effectively and quickly, including working safely with knives
• Develop and execute cleaning and pest control schedule and arrange for services with contractors as needed for maintenance of kitchen equipment
• Use commercial dishwashing equipment and hand wash dishes
• Develop new products of kettle chips (from our root crops), kettle corn (using our cane syrup), and other products that can use our kettle room and ingredients such as salad dressings, tea blends, etc.
• Utilize spreadsheets to budget additions of equipment, tools, and supplies to achieve our production goals.
• Use a tablet, computer, or smartphone for digital record keeping and accurately enter data, use formulas on a spreadsheet
• Follow safe food handling training and adhere to health standards for attending work and preventing the spread of communicable disease
• Demonstrate an attention to detail in all work capacities (training, record keeping, communication)
• Obtain servsafe kitchen manager certification and follow food safety protocols
• Help coordinate our pastured pork program including inventory of frozen meats received, calculating yield percentages, develop recipes for house-made sausage, help develop events centered around the pork products / butchering, and develop profit centers for this product
The standards of our packaged value added products are: 1) Always including at least one ingredient grown on our farm, 2) Organic ingredients for anything that is purchased or sourced from off the farm (spices, other produce, oils, vinegars)
3) Best possible quality for any non-organic ingredient (non-iodized sea salt, natural pectin, for example)
4) turning a waste stream into sellable product, or preserving foods that would go bad for future sale
5) packaging that is reusable, recyclable, and minimizes or avoids plastic whenever possible. Glass jars are our primary choice for both customer experience and environmental impact.
6) cooking in stainless steel or glass to minimize transfer of aluminum or other chemicals such as PFAS into foods, no hot products above 110F into plastic.
7) Healthier or better quality options than commercially available products such as low-sugar jams.
