Job Description

Bodhi Farms is seeking a Banquet Sous Chef in Bozeman, MT, to oversee catered events and food preparation during the summer season. The role requires experience in outdoor cooking and managing high-pressure situations. The position emphasizes leadership, teamwork, and adherence to established recipes while promoting a culture of respect and creativity. The chef will work closely with the Head Chef and manage kitchen operations for various events.

Bodhi Farms is a sustainable boutique eco resort destination just outside of Bozeman offers dining, glamping, events, and wellness services. We boast 1.5 acres of organic gardens and permaculture food forests that we harvest much of our food from. We are currently looking for a Banquet Sous Chef to join our team. Applicants should have a solid foundation in outdoor cooking, smoking meats, catering and a passion for the culinary arts.

Essential Job Functions. Reporting directly to the Head Chef, the Banquet Sous Chef is responsible for overseeing the execution of all of our catered events on our farm. These catered events can range from 25 person lunches in our Garden Table venue or a family style meal for 200 people at our Backyard venue. Much of the cooking is done over an offset smoker so experience in that area is required. Between events, oversee the preparation for all lunches and dinners for the Field Kitchen restaurant. This is a full time position from June through September. You must have the ability to maintain your composure during high-pressure situations resulting from business levels and time constraints.

Food Preparation & Presentation. Ensuring the highest level of execution in the preparation of all meals, properly executing preparation and plating to Head Chef standards.
• Adhering to Bodhi Farm Recipes. We love new ideas, but you are to adhere to our established recipes unless you have received permission from the Head Chef to deviate.
• Manage Prep Volumes. Ensure that all food prep work is done on time and in the proper volumes by communicating with the prep team members and Head Chef so proper expectations are communicated.
• Presentation. Ensure that all food is presented in a way that is consistent with the standards that have been established.
• Get stuff done. Ensure that you and your team do whatever it takes to establish Bodhi Farms as a world class culinary destination.

Backyard Kitchen. Taking ownership over the catering kitchen and all operations within. During the summer and fall it acts as a prep and catering kitchen and during the winter and spring it acts as the primary restaurant kitchen until the construction of the restaurant is complete.
• Sauces. We have several signature sauces and dressings that are continuously prepared throughout the week.
• Processing Produce. Help harvest our garden vegetables and process them so that they are ready to use in making plates, pizzas, salads and sandwiches.
• Catering pre & Events. It is not just prepping day in and day out, there are also catered events on our farm all the time and this is a great opportunity to step up and learn the ropes of catering small and large events.
• Maintaining A Meticulous Workspace. Maintain a clean workspace, putting away ingredients and equipment as soon as you are done with them, washing utensils and countertops.
• Refrigerators. Ensure that the refrigerators are clean and organized to the food safety guidelines.
• Pantry. Assist in cleaning and continuous organizing of the backroom and all food storage areas.
• Daily Cleaning. Ensure that all kitchen spaces are thoroughly cleaned after each meal and that regular deep cleanings are scheduled weekly.
• Dishwashing. While we have a separate position focused on washing dishes, no one on our team is above dishwashing. We all work together.

Food Safety. You will be responsible for maintaining a positive relationship with the health department by meeting or exceeding all requirements.
• Ensure that all prepared foods are properly labeled and dated and stored.
• Adhere to food, health and safety standards so as to ensure that the facility is continually held in high regard by the Health Department.
• Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances.

Other Responsibilities
• Resort Activities. Be available to host classes showcasing your culinary passions.
• Bodhi Zero Food Waste Program. Support our sustainable waste program by always disposing of food waste in the proper containers, recycling, and using disposable supplies frugally.
• Dress Code. Ensure dress code standards are 100% for all team members.

Skills Required
• Experience in the culinary arts
• Being adaptable, flexible, positive, and having an even temperament
• Having a keen eye for detail
• The ability to multitask and manage time effectively
• The ability to lead a team effectively, execute assigned tasks, and work efficiently with department heads.

Physical Requirements. We are an outdoor business and this has its physical requirements. If you’re looking for a desk job, you’re in the wrong place.
• Withstanding temperatures of 0 degrees to 100 degrees Fahrenheit.
• Moving constantly for extended periods of time (up to 10-12 hours a day).
• Lifting and carrying items weighing up to 75 lbs. for distances of up to 25 ft.

Qualifications
• A passion for open fire cooking and smoking meats.
• Possess a culinary arts degree and/or equivalent training a plus.
• Have a ServeSafe or Food Handlers certification.
• 1+ years of kitchen experience in a fine dining restaurant or hotel environment.
• 2+ years of catering experience.
